Cauliflower Rice

I love rice, but couldn't eat it during the Whole 30 Challenge. So I got creative with cauliflower and made "rice"!

Ingredients:
  • One head of cauliflower
  • 1 tbsp. coconut oil
  • Dash of salt
  • Dash of pepper
  • Dash of curry powder
Directions:
  1. Rinse off cauliflower and dry with paper towel
  2. In a medium pan, add water and wait until boiling
  3. Cut cauliflower into florets and add into water
  4. Cook for about 6 minutes, or until soft (but not too soft!)
  5. Drain and shake off excess water
  6. Add florets into food processor with coconut oil and pulse until consistency of rice
  7. Add spices
  8. Pulse again until mixed
Serve with Thai Coconut Curry Shrimp!
